I am going to give receipe how my mom use to make this Eggplant fry(Katharikkai varuval).
Ingredients
- Medium size Eggplant 5 sliced length wise.
- Pearl onion 5 peeled and chopped finely.
- Green chillies 3 or according to your spicy level.
- Curry leaves 4.
- Mustard seeds,Urad dhal,cumin seeds each 1/2 tsp.
- Salt to taste.
- Oil
- Keep pan in stove and add one tsp of oil ,add mustard seeds,urad dhal,cumin seeds and wait till it splutters.then add curry leaves.
- Add onion and green chilles and fry till onion is light brown color.
- Now add chopped eggplant and add salt and fry.
- Fry in medium high flame .don't stir heavily
- Finish it when eggplant is done.
