Eggplant fry

     I am going to give receipe how my mom use to make this Eggplant fry(Katharikkai varuval).


  1.      Medium size Eggplant 5 sliced length wise.
  2.      Pearl onion 5 peeled and chopped finely.
  3.      Green chillies 3 or according to your spicy level.
  4.      Curry leaves 4.
  5.      Mustard seeds,Urad dhal,cumin seeds each 1/2 tsp.
  6.      Salt to taste.
  7.      Oil
  •      Keep pan in stove and  add one tsp of oil ,add mustard seeds,urad dhal,cumin seeds and  wait  till it  splutters.then add curry leaves.
  •     Add onion and green chilles and fry till onion is light brown color.
  •     Now add chopped eggplant and add salt and fry.
  •     Fry in medium high flame .don't stir heavily
  •     Finish it when eggplant is done.
Serve with sambar rice.
